"When I first arrived here in November 2009, the kitchen was opening a lot of boxes and packages," recalls Plato's Executive Chef, Todd Slossberg,
"Now we do everything from scratch".
Moving to the Roaring Fork Valley in the fall of 1987, Todd Slossberg gained culinary momentum at the Hotel Jerome where he cooked for 12 years where he was nominated for a James Beard Award. Parting from the Hotel Jerome, Slossberg started his own catering business & restaurant Crave, located in Basalt, until Plato's contracted him to help revamp their food program. Since Todd took over this Aspen restaurant, the food, service and beautiful setting have been noted in a variety of publications both local and national.
Slossberg's passion for real and sustainable ingredients has continued to shape and progress Plato's indulgent menu. Flavors are crafted with thought and dishes with a sense of artisanal expertise because in the end, fresh, organic and sustainable ingredients are what help place Plato's at the top of the Aspen's dining scene.
